ABOUT

This course provides you with the foundation of cookery skills and knowledge required to progress in your career as a chef.

WHAT WILL I STUDY?

Topics covered can include:

  • Food safety and sanitation
  • Food technology, commodities and basic skills
  • Stocks, sauces and soups
  • Fish and shellfish
  • Vegetable and potato dishes
  • Eggs, pasta and rice
  • Butchery, including poultry, meat, offal and game, including whole carcasses
  • Sous vide modern cookery techniques
  • Curing, smoking and other preserves
  • Contemporary presentations

ENTRY REQUIREMENTS

You will need:

  • A relevant Level 1 qualification
  • To be working in the hospitality industry as a chef/cook
  • A good understanding of English

All applicants must have an initial assessment and interview to confirm that the course is suitable for them.

COURSEWORK REQUIREMENTS

The course is assessed throughout with practical assignments and written tests.

FEES

Adults - LEVEL 2

This course may be free for you if you meet certain conditions:

  • If you are not working or have a low income. You need to show proof of your income or benefits.
  • If you are aged 19-23 and you do not have the equivalent of five GCSEs at grade 9-4. You need to show us proof of any qualifications you already have.
  • Residency rules apply. You need to show you have permission to live, work and study in the UK without conditions.
  • There are some exceptions, such as certain visa types.

If you do not meet the residency rules, you can still enrol on the course but you may have to pay some fees. All applicants are fee-assessed during enrolment.

If you are not eligible for a free or reduced-cost course, you need to pay the full fee.

Some courses have additional costs, such as for specialist materials and trips.

Additional Costs

You will be expected to purchase the required uniform and equipment for the programme, which reflects both industry norms and safety requirements. These should specifically conform to Capital City College standards and are approximately £350; further information will be provided at enrolment.

PROGRESSION

You can continue working as a cook/chef within the hospitality industry, with the potential to be promoted, and could progress onto a Level 3 course.
