ABOUT THE COURSE

This course enables you to develop the foundation of cookery skills and knowledge required to develop and progress in your career as a chef.

WHAT WILL I STUDY?

Topics covered can include:

  • Food Safety and Sanitation
  • Food Technology, Commodities and Basic Skills
  • Stocks, sauces and soups
  • Fish and shellfish
  • Vegetable and potato dishes
  • Eggs, pasta and rice
  • Butchery including poultry, meat, offal and game, including whole carcasses
  • Sous vide modern cookery techniques
  • Curing, smoking and other preserves
  • Contemporary presentations

WHAT WILL I NEED?

You will need:

  • A relevant Level 1 qualification
  • To be working in the hospitality industry as a chef/cook
  • A good understanding of English

All applicants must have an initial assessment and interview to confirm that the course is suitable for them.

HOW WILL I BE ASSESSED?

The course is assessed throughout with practical assignments and written tests.

WHAT WILL IT COST?

Adults - Entry Level, Level 1 and Level 2


If you will be aged 19+ on 31st August prior to the start date of your course, up to Level 2, then your study with us will be free. You must have lived for 3 years within the EU/EEA/UK prior to the start of your course, you must have lived in the UK before 1st January 2021 and you must have permission to live in the UK for at least 12 months from the first day of learning. Additional Costs

You will be expected to purchase the required uniform and equipment for the programme, which reflect both industry norms and safety requirements. These should specifically conform to Westminster Kingsway College standards and are approximately £350; further information will be provided at enrolment. Many of our students are eligible for financial support when studying at college – please click here for more information.

WHAT CAN I DO AFTER?

You can continue working as a cook/chef within the hospitality industry, with potential to be promoted, and could progress onto a Level 3 course.

MEET SOME OF THE TEACHERS

Francis Ayemou

Francis Ayemou started his career working as a chef in a variety of European countries such as France and Italy. After working for many years, Francis decided to go back to university to gain a teaching qualification.

After completing his qualification in Teaching, Francis lectured in Eastbourne, Brighton City College, Guildford College and South Thames Merton College. He then joined Westminster Kingsway College (part of Capital City College Group) in 2016.

Subjects Francis teaches include:

  • ·       FSA Kitchen and Larder

In 2021, Francis was invited to join the Culinary team at the London 2012 Olympics village and prepared and cooked specific diets for the athletes.

Francis is a dedicated, passionate, and enthusiastic teacher who loves helping students meet their learning and career goals.
